At the end of last year I received a Vitamix for my birthday. I had been wanting one for years and J and I swooned over the ones we would see in Whole Foods with the sales reps talking up how you could basically make ice cream out of carrots and it would taste like it came from Shake Shack. So when I received the most generous gift from my parents I set out to make EVERYTHING in the health machine. My first attempt was orange juice, which was so thick with pulp that I couldn’t even pour it. Then I made hummus and over-heated my machine so it turned off, not responding to my attempts at resuscitation for a good 15 minutes. Since I stared using the Vitamix I have experienced about a 10:1 ratio of failed attempts to successful, delicious creations. I know some of you are wincing right now at my haphazard, imperfect execution. My mom swears it is because I haven’t watched the video that came with the glorified blender, but I am skeptical that that is the only reason.
I was reminded this morning that I have been meaning to give the company a call when I decided I wanted to make cashew butter and my Vitamix revolted. I didn’t have time to wait for the machine’s resurrection and having no other food at my house (J will have some comments about my refrigerator soon) I decided to walk to the specialty food store next to my apartment to grab some nut butter before heading to work. What I discovered was something delicious and so much better than the crumbly cashew mess still sitting at home on my counter.
I know that by saying this I am putting myself in the category of laggard, but I just have to evangelize. Justin’s Chocolate Almond Butter is delicious and rebelliously sweet to be eating for breakfast, but after the blender drama this morning I thought I deserved it on a nice crisp apple. As we speak it is sitting in my desk drawer beckoning me to take it out and eat “just a bite”.

Justin, I put my name on it. Right next to yours. No one in my office will even think of touching it now.
Although I try and make everything on my own whenever possible, I am grateful for this nut butter when I run into a blender crisis. Eat up!
