J and I are off to California this week! I am so excited to take walking tours through San Francisco, ride bikes across Golden Gate Bridge, and lay on the beach in southern CA. Of course we are also ecstatic to try all of the restaurants that we have been researching for weeks now (my mouth is watering just thinking about it). When we return, J and I are thrilled to bring you our August topic: Brown Bag Special. What do you eat at work or on-the-go? J and I are going to share what works for us to eat healthy outside of our homes.
I couldn’t help sharing what I have been munching on this week. After a long break from the kitchen (probably a result of being fed up with no counter space or dishwasher), I decided to devote a whole evening to the wonderful sport. I have to say, it felt amazing! I seriously woke up the next morning happy that I had good food to put in my mouth that day.
This cauliflower crust pizza may become a go-to recipe for me. I found the crust recipe here and made a sauce out of some roasted yellow and red peppers, crushed tomatoes, a few baby heirloom tomatoes I had on hand, lots of fresh basil, garlic (more cloves than I am willing to admit), a bit of olive oil and parmesan. I was going for a thicker texture and the fantastically fresh basil kick you get with a pesto and I have to say it accomplished those things and more. I topped it off with some fresh fava beans, kale and a little more parmesan. The kale got crispy in the oven and with the buttery fava beans the whole thing just works. Writing this makes me want to go eat another piece… You will just have to eat some for me while we are gone!
